Creme Caramel

A few weeks ago, in my pastry class, I learned a new and sinfully good recipe. It is known as "creme caramel." The texture of this dessert is soft. So soft that it just melts in your mouth. Creme caramel is a custard base dessert. When you hear the word custard, you will only need 3 ingredients. Egg, sugar and milk. That's it! Amazing right? Allright so here is the recipe.

You will need:
-200gr sugar (for caramelizing)
-2tsp vanilla extract
-8 eggs
-1 litre milk
-200gr sugar

1.Put the sugar in a pot. Caramalize. Occassionaly stirring it by it's own. Never ever use a spoon to stir the sugar or else it will harden. After it has caramelizes and has a nice colour, transfer it to a mould. Set aside.

2. Using the pot in step 1 (don't wash the pot) pour in the milk and heat it up until it is warm.
Then add vanilla and sugar in. Transfer the mixture into a bowl and add the eggs in. Use a wooden spoon for this method. And try not to mix too much. You don't want bubbles to appear. Then pour it in into the mould containing the caramelized sugar.

3. Bake it with a hot water bath method until cooked. As shown in the picture below. How do you know when it's cooked? Simple. Insert a knife. And if it comes out clean, it's cooked. Let it cool.

4. Serve it cold. Before serving, sink the mould in hot water for a while to melt the caramel. And it is now ready to be enjoyed.
